Salmon and Tomato Parcels

Preparation Time : 5-7 minutes
Cooking time: 10 minutes
Serves: 2 

Ingredients:


  • Salmon cuts - 4
  • Olive Oil - 2 tbsp
  • Lemon Juice - 1 tbsp
  • Spring Onions - 1/2 cup (finely sliced)
  • Cherry Tomatoes - 8 (each diced into 4 pieces)
  • Black Pepper powder - 1 tbsp
  • Salt to taste
  • Herbs
    • Coriander - 1 tbsp (finely chopped) 
    • Mint leaves - 8 
    • Parsley - 1 tbsp (finely chopped)




Directions:

  1. Mix the olive oil and lemon juice in a bowl.



  • Take 2 aluminium foil sheets and place 2 salmon cuts on each.  We will make two parcels. 


  • Add all the ingredients (including the olive oil and lemon juice mixed in step 1) to it. (Add 1/2 tbsp of black pepper powder to each parcel). 




  • Wrap the parcels nicely and place it in a grill on medium-high flame for 10 minutes.
  • Open the parcels and serve hot with rice. 

Notes:
  • You can use herbs of your choice.
  • If the fish is straight out of the freezer, you may need to grill it for a longer time.
