Meatballs in Tomato Stew (Recipe For Toddlers)

Preparation time : 10 minutes
Cooking time: 20 minutes
Serves: 2-3 hungry toddlers

Ingredients:


  • For the meatballs:
    • Minced meat - 250 g (I used chicken) 
    • Chinese chives - 2 sticks (finely chopped) 
    • Egg - 1
    • Bread Crumbs - 3 tbsp (I used Japanese panko)
    • Black pepper - 1/2 tsp
    • Salt - to taste
    • Olive oil - 3 tbsp for frying the meatballs 

  • For the stew
    • Pureed Tomatoes - 2 (medium sized)
    • Broccoli - 2 florets (each of about 2 inches length finely chopped into bite size peices)
    • Potato - 1 (mashed)
    • Chicken Stock - 1 cup
    • Olive oil/butter - 2 tbsp
    • Milk - 1/4 cup
    • Black pepper
    • Salt to taste
    • Finely chopped Fresh Coriander for garnishing


Directions:

  • Mix all the ingredients for the meatball and make balls out of it. You should be able to make about 8 medium sized balls with the above ingredients. 





  • Heat oil in a pan and fry the meatballs over medium heat for about 5-7 minutes and keep turning them till the meatballs are evenly cooked and are golden brown in color. I put a lid over the pan for a couple of minutes to ensure the chicken inside the meatballs is properly cooked. 





  • Remove the meatballs from the pan and in the same pan, add some butter and add the pureed tomatoes and chicken stock to it. Also add the mashed potatoes and broccoli. Add salt and pepper. 


  • Add the meatballs and milk to this.






  • Put a lid over it and let it simmer for about 10-15 minutes. 
  • Garnish with fresh coriander leaves and serve hot with rice or bread.
